Ground, not bought
Dosa and idli batter is ground in-house every night and left to ferment on its own time. No premix, no shortcuts, no yesterday.

Our story
Dravidam started with one stubborn rule — the batter gets ground fresh and left alone to ferment on its own schedule. No premix, no accelerators, no cutting the wait short because the queue is long.
Everything else follows from that. Dosas hit the tawa when you order them. Vadas hit the oil when you order them. The coffee decoction drips at its own pace and gets poured between davara and tumbler until it froths. Three kitchens now — Noida, Dwarka and a highway café at Gajraula — all working from the same recipe book.

How we cook
None of this is clever. It is just the way a South Indian tiffin room has always worked, kept intact.
Dosa and idli batter is ground in-house every night and left to ferment on its own time. No premix, no shortcuts, no yesterday.
Every outlet, every kitchen, every fryer. Nothing crosses over — the way a South Indian tiffin room has always worked.
Dosas hit the tawa when you order, vadas hit the oil when you order. Nothing sits under a lamp waiting for you.
Steel drip filter, chicory blend, boiled milk, and the long pour between davara and tumbler. It takes longer. It is worth it.

Good to know
Anything else, call the outlet — someone in the kitchen will pick up.
Yes. Every outlet is 100% pure vegetarian. There is no meat, fish or egg anywhere in our kitchens, and no shared fryer or griddle to worry about.
Three outlets — Spectrum Metro Mall in Sector 75 Noida, City Centre Mall in Sector 12 Dwarka, and the NH-9 highway café at Gajraula. All three are open 10:00 AM to 10:30 PM, every day of the week.
For groups we do. Call the outlet directly or send us a request through the contact form and the manager will confirm by phone. For one or two people we usually seat you straight away, though weekend evenings after 7 PM can mean a short wait.
A ghee pudi thatte idli, a masala dosa and a filter coffee — that trio is the honest measure of any South Indian kitchen. If you want the one dish that is ours alone, order the Dravidam Special Dosa.
Most of the menu is mild to medium. The Mysore masala dosa, mirchi bhajji and pineapple chilli soda carry real heat. Tell the counter and the kitchen will dial the chutney down for you.
Yes — the Healthy Menu section. Steamed idli with neer chutney, a high-protein paneer-stuffed lentil dosa, and a smashed avocado dosa made without butter. Filter coffee is also available with jaggery or sugar-free.
We do office and house catering out of the Noida and Dwarka kitchens, with 48 hours notice. Use the contact form and pick "Catering" so it reaches the right person.
Menu prices are exclusive of GST at 5%, which is added to your bill.
